Cooking with Adriana: Simple Spinach Lemon Chicken Salad

Adriana is the absolute joy and daughter of EnFuse co-owner Tyler. She’s an adventurous and bright kid who loves to cook. Here’s one of her favorite recipes.


  • 7 oz fresh baby organic spinach

  • 2 oz thinly sliced red onion

  • 2 oz finely chopped celery

  • 4 oz boneless skinless chicken thighs

For dressing

  • 2 tbsp fresh squeezed orange juice

  • 1 tbsp fresh squeezed lemon juice

  • 5 cloves finely minced garlic

  • 2 tsp olive oil

  • 2 tsp thyme, finely chopped (fresh if possible)

  • Salt and pepper


  1. Make dressing first.

  2. Mix thyme, garlic, orange juice, lemon juice, olive oil, salt and pepper.

  3. Heat pan to med-high heat.

  4. Season chicken with salt and pepper.

  5. Pan fry until cooked.

  6. Set chicken aside and let cool.

  7. Cut chicken into strips once cool.

  8. In a large bowl, add spinach, red onion, celery, and chicken.

  9. Pour dressing over salad and enjoy!
